Shepherds used to wrap the forms  from  cheese  pecorino cheese  with the  walnut leaves. In this way they protected them from external agents and slowed down their dehydration, extending the shelf life of the cheese, which became a grater much later. Aged in walnut leaves, which absorb humidity and favor the transpiration of the cheese, this pecorino is a unique product, full of taste and with an intense aroma. The paste is white, semi-hard and sweet with a fragrant flavor.  The herbaceous scent envelops the cheese as well as the walnut leaves.
